Salting Pork, Eating Beef, & Buying Roasts

- Pork was salted (cured) and smoked for flavor. Had to have a lot of salt to preserve it through the summer. A steer was butchered in the winter and most of it was eaten immediately. Some meat was cold-packed - cooked, cut up, and stored in jars. The only other time they had fresh meat was for threshing dinners, when they bought roasts.
