Discusses his honey business and the types of crops that produce honey. Wildflower is darker honey, Sweet Clover is lighter, Black locust honey is lighter and mild, Buckwheat is light and most favored, and Golden Rod honey has a good flavor but bad smell. Leave Golden Rod honey in a barrel for three days so the smell would disappear. Also talks about replacing the Queen bee every two years. Says his hives have gone from 200 to 60, so he split the hives in half to get 120.

Mentions how the USDA told farmers to stop using Sweet Clove because it was an obnoxious weed, so Ellis talked to a Congressman in DC who straightened the USDA out.
