LIVESTOCK
Starts with the Chicago Fire influenced cows in Illinois. Out West, brought cattle shipped back east to Chicago via railhead in Kansas. Stockyards were the largest in world. Packing industry center was Chicago. Armour Co., Swift, were two packing companies. Also the Chicago Livestock Exposition was the most important center. Champions from there caused trading in sons for breeding. Event there of 300 fiberglass cows decorated in late 1990s. Different quality grades of meat; Choice, Prime. Chicago may be the Prime beef capital of the world. Highest price. Steaks for the best restaurants nationwide. Illinois has great history in beef cattle.
FARM ORGANIZATIONS
One of the first breed associations was the American Angus in Chicago. Best purebred ops-L. B. Pierce & Sons up north, J Garrett Colin of Pleasant Plains in genetics. Other breeds - Les Mather's Leveldale Farm in Mason County - Shorthorns. Northern Pump with Herefords.
